100 gallon capacity. Fully steam jacketed design for faster heat-up and cook times. Stainless steel construction. Sloped bottom for superior draining. Able to attach pre-existing steam source. Simmer steam supply valve and a thermostatic steam trap. Spring assist cover with condensate ring. 2 inch draw off valve with perforated strainer. Powered by direct steam. 36 1/2 inch W, 39 1/2 inch D, 45 inches H. Flanged feet to ensure superb stability. Delivery to West Point NY. Removal of current steam kettle. Installation of new steam kettle. Standard warranty. Made in America.
